After 10 years on the UK and a lovely English husband (home, job, car, friends, neighbours all also English) here I am still loving al Spanish things (except nosy neighbours) as ever!

I have not changed much: a bit bigger, a bit more discreet, good at queuing, used to say thanks, loving Mark & Spencer’s, eating brown bread for breakfast, having a light lunch and an early dinner but….still with a strong accent, even stronger temper, not carpets on the house and hating fish and chips, English shoes, dark evening, the NHS, the weather, rainy outdoors activities and "very polite” rude people.....we could say I have become SPANGLISH!

So how about If I share with you all a bit my spanglish cooking, what I still find odd, what I still miss and what I have learned to love?

Carrot cake!

 Hi All,

Not very inspired today...not sure why, I am probably just tired (and it is only Tuesday!) so I'll try to be short and sweet!!

I just wanted to share a little bit a baking with you all...CARROT CAKE!  I know "Carrots in a cake?"...that is exactly what I thought the first time I heard of it, and guess what? the name put me off so much that in all these years I never tried it until few weeks ago when I decided to bake one myself and I realised that it has just got a large carrot on it (two if you are very unlucky)!


So from all those carrots you see in there....I only used the largest one!

I have to admit that my first attempt it was pretty awful, not even Darren could eat it and he is good at eaten almost anything I cook...just to be kind to me I think (which I am very grateful for!)



Carrot, apple, pecan nuts (nueces para los que como yo no tenian ni idea de lo que son!).........


And the rest of normal stuff you would put in a cake (eggs, flour, sugar, baking podwer...) and "voila".....CARROT CAKE!

The topping is made with Ricota cheese, butter and sugar (not calories at all!) and it would look better If I had the right type of sugar at the time....but it tastes lovely!!!

I personally would have a bowl of the topping in bread and forget about the cake all together but if anybody is interested on the receipt let me know and I'll post it!

  4. Girl no se como estará de sabor, pero tiene una pinta buenísima. Creo que cuando hagas uno de los de chocolate también deberías colgar la foto para tus seguidores blogeros, ja ja cuando he visto este me lo ha recordado,....que bueno que estaba.
